Surprise Cookies Recipe

Ingredients
  • 1/4 tsp pure vanilla extract .
  • 1/2 tsp salt .
  • 1 large egg .
  • COOKIES .
  • 1/4 c milk .
  • 1 tsp pure vanilla extract .
  • 1 3/4 c all-purpose flour .
  • 12 large marshmallows, cut in half horizontally .
  • 1/2 c unsalted butter, softened .
  • 1/2 c milk .
  • 2 c confectioners' sugar .
  • CHOCOLATE FROSTING .
  • 1/4 c cocoa powder .
  • 4 tbsps unsalted butter, melted & cooked .
  • 1/2 tsp baking soda .
  • 1 c sugar .
  • 3/4 c cocoa powder

Directions
  • Step #1 COOKIES:.
  • Step #2 Preheat oven to 375°.
  • Step #3 In a medium bowl, cocoa powder, baking soda, whisk together flour, & salt; set aside.
  • Step #4 In the bowl of an electric mixer fitted with the paddle attachment, cream together butter & sugar until light & fluffy, about 2 mins.
  • Step #5 Add egg, & vanilla, milk, & beat until well mixd.
  • Step #6 Add reserved flour mixture; mix on lowish speed until mixd.
  • Step #7 Using a tbsp or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart.
  • Step #8 Bake until cookies begin to spread & become firm, 10 to 12 mins.
  • Step #9 CHOCOLATE FROSTING FOR SURPRISE COOKIES:.
  • Step #10 Place confectioner's sugar in a medium bowl.
  • Step #11 Whisk in butter & cocoa powder.
  • Step #12 Add milk & vanilla, & whisk until well mixd.
  • Step #13 BACK TO COOKIES AGAIN:.
  • Step #14 Remove baking sheets from oven, & place a marshmallow, in the center of each cookie, cut-side down, pressing down slightly.
  • Step #15 Return to oven, & continue baking until marshmallows begins to melt, 2 to 2 1/2 mins.
  • Step #16 Transfer cookies to a wire rack to cool completely before frosting.
  • Step #17 Spread about 1 tbsp of frosting over each marshmallow, starting in the center & continuing outward until marshmallow is covered.
