Spanish Rice Recipe

Ingredients
  • 2 1/2 c water .
  • 2 c rice .
  • 4 slices bacon, cut in 1/4-inch dice .
  • 4 large green onions, sliced & green & whites separated .
  • 1 (14 1/2 oz) can tomato sauce

Directions
  • Step #1 Mix tomato sauce & enough water to make 4-1/4 c.
  • Step #2 Heat a heavy pot with a tight fitting lid over medium-low heat.
  • Step #3 Brown bacon till just barely crisp, remove & reserve.
  • Step #4 Add the white parts of the onions & sauté till it starts to turn opaque, about two mins.
  • Step #5 Add rice & cook, stirring frequently till it starts to turn golden.
  • Step #6 Add tomato/water mixture & turn heat to low.
  • Step #7 Simmer 25 mins or so.
  • Step #8 I cheat & lift the lid after about twenty mins, & give it a good stir.
  • Step #9 Cook until all the liquid is absorbed.
  • Step #10 Garnish with the bacon & the green part of the onion.
