Mediterranean Chicken Recipe

Ingredients
  • 6 oz marinated artichokes, halves .
  • 1 tbsp olive oil .
  • 1 small zucchini, cut into 1/2-inch pieces .
  • 2 tsps dried Italian seasoning .
  • 1 onion, sliced .
  • 1 (28 oz) can sliced tomatoes, undrained .
  • salt .
  • 1/2 c sliced fresh parsley .
  • 1/2 c black olives, pitted & halved .
  • 2 tbsps balsamic vinegar .
  • 1 tsp dried basil .
  • 2 large garlic cloves, minced .
  • 3 lbs bone-in chicken pieces (thighs or full legs, or a whole chicken, cut up) .

Directions
  • Step #1 Remove & discard skin & any excess fat from chicken.
  • Step #2 Moderately sprinkle both sides of each chicken piece with salt, pepper, & paprika.
  • Step #3 Heat olive oil In a large-ish non-stick skillet & add half the chicken pieces & cook, turning pieces until golden brown, for 4 to 6 mins.
  • Step #4 Remove to a plate & repeat with remaining chicken.
  • Step #5 Reduce heat to medium-low & add onion & garlic.
  • Step #6 Cook, stirring, for 1 min.
  • Step #7 Stir in tomatoes, vinegar, Italian seasoning, & basil.
  • Step #8 Bring mixture to a boil.
  • Step #9 Nestle chicken pieces into tomato mixture in the pan, reduce heat & let simmer uncovered, turning chicken every once in awhile.
  • Step #10 Cook for about 20-30 mins.
  • Step #11 Chicken is fully cooked when juices run clear.
  • Step #12 Stir in artichokes & zucchini, cover & let simmer for 5 mins or until zucchini is barely tender.
  • Step #13 Stir in parsley & olives, & serve over your pasta of choice.
