Crispy Chicken & Sauce With Asparagus Spears Recipe

Ingredients
  • 6 Ritz crackers, finely crushed .
  • 14 oz reduced-sodium fat-free chicken broth .
  • 4 small boneless skinless chicken breast halves (1 lb) .
  • 1/3 c light chive & onion cream cheese .
  • 2 tsps extra virgin olive oil .
  • 2 tbsps parmesan cheese, grated .
  • 2 c brown rice, uncooked .
  • 3/4 lb asparagus spears, trimmed & steamed (1 lb)

Directions
  • Step #1 Cook brown rice with 1 1/4 c of the broth & 1/2 c water.
  • Step #2 Mix cracker crumbs with Parmesan cheese on a plate.
  • Step #3 Rinse chicken with cold water; shake off excess water.
  • Step #4 Dip chicken into cracker mixture, turning to coat.
  • Step #5 Heat oil in large nonstick skillet on medium.
  • Step #6 Add chicken & cook 5 - 6 mins or until chicken is golden brown & cooked through.
  • Step #7 Place chicken on serving plate.
  • Step #8 Set aside & keep warm.
  • Step #9 Add remaining 1/2 c of broth & cream cheese spread to same skillet.
  • Step #10 Cook on medium heat until mixture just comes to boil, stirring constantly.
  • Step #11 Simmer 3 mins or until sauce thickens.
  • Step #12 Spoon sauce over chicken.
  • Step #13 Serve with rice & aspapagus.
