Apple Butter Recipe

Ingredients
  • 1/2 tsp ground cloves .
  • 2 tbsps lemon juice .
  • 1 tbsp ground cinnamon .
  • 1 c fresh unsweetened apple cider .
  • 2 c firmly packed light brown sugar .
  • 2 tbsps grated lemon zest .
  • 5 quarts tart apples .
  • 2 c granulated sugar .
  • 1 tsp ground ginger .
  • 1/2 tsp ground allspice

Directions
  • Step #1 Quarter apples & remove stems.
  • Step #2 Do not peel or core.
  • Step #3 Place apples & apple cider in a dutch oven or large pot.
  • Step #4 Slowly bring up to a boil, then reduce heat & let simmer, stirring every once in awhile, until apples are mushy.
  • Step #5 Put cooked apples through a food mill or sieve to remove the skin & seeds.
  • Step #6 Measure the pulp & put it back in the pot, along with the spices, lemon zest, & lemon juice.
  • Step #7 Add 1/3 c sugar for each c of pulp, using equal parts brown sugar & granulated sugar.
  • Step #8 Cook over low heat/flame for several hrs, stirring frequently to prevent mixture from scorching on the bottom.
  • Step #9 Apple butter is done when no liquid seeps from the edges when a spoonful is dropped onto a saucer.
  • Step #10 Pack into hot sterile jars & seal as directed by manufacturer.
