Parmigiana Di Melanzane Aka Eggplant Parmesan Recipe

Ingredients
  • nonstick cooking spray .
  • 3/4 c gruyere cheese or mozzarella cheese, sliced thin .
  • 1 egg .
  • 1 c breadcrumbs (seasoned with garlic salt, oregano, basil) .
  • extra virgin olive oil .
  • 1 1/4 c tomato sauce .
  • salt, to taste .
  • salt .
  • parmesan cheese, to taste .
  • 1 medium eggplant .
  • pepper, to taste

Directions
  • Step #1 wash (but do not peel) eggplant.
  • Step #2 slice laterally into pieces a half inch thick.
  • Step #3 put the eggplant in a colander & salt it generously.
  • Step #4 let the eggplant sit & "weep" half an hr--you can omit this step, if you're worried about sodium, but the eggplant will be bitter.
  • Step #5 don't say i didn't warn you.
  • Step #6 wash off the eggplant slices, & pat dry.
  • Step #7 preheat your trusty oven to 350 degrees farenheit.
  • Step #8 set up two bowls, one with a beaten egg, the other with the breadcrumbs.
  • Step #9 dip the slices in the egg, making sure to get both sides of the slice.
  • Step #10 take the egged-slices, & dredge them carefully in the breadcrumbs.
  • Step #11 heat a few tbsps of extra virgin olive oil in a pan.
  • Step #12 when the oil almost smokes--and other than the flavor, this is why you have to use e.
  • Step #13 v.
  • Step #14 o.
  • Step #15 o: normal olive oil or other oils smoke at a higher temperature--place a few slices off eggplant into the pan at a time.
  • Step #16 cook for two or three mins, periodically checking the color on the pan-side of the slice.
  • Step #17 when the slices are golden-brown on the pan-side, flip, & cook again.
  • Step #18 place on paper towels to dry.
  • Step #19 repeat until all the eggplant is cooked.
  • Step #20 add more oil & let the oil reheat as necessary.
  • Step #21 give a cookie sheet a shot of the non-stick cooking spray.
  • Step #22 place the four largest eggplant slices close to each other (but not touching) on the sheet.
  • Step #23 put two tbsps of sauce & some cheese on top of each slice.
  • Step #24 put the four next-largest slices on top of each, & put sauce & cheese on top again, building the towers until all the eggplant is used up.
  • Step #25 put the cookie sheet in the oven, & cook the eggplant until the cheese melts & browns slightly.
