No-bake 7-up Lemon Cheesecake With Strawberry Glaze Recipe

Ingredients
  • STRAWBERRY SAUCE .
  • 1 (3 1/2 oz) package lemon pudding mix, small, not instant .
  • 1/2 c strawberry jelly, melted .
  • 2 c graham cracker crumbs .
  • 3/4 c water .
  • 1 1/2 c carbonated lemon-lime beverage, 7-UP brand .
  • 16 oz cream cheese .
  • fresh strawberries .
  • CRUST .
  • 6 tbsps sugar .
  • 1 tsp cinnamon .
  • 1/2 c powdered sugar .
  • 1 (1/4 oz) package unflavored gelatin .
  • CHEESECAKE .
  • 2 eggs, beaten .
  • 1/2 c butter, melted

Directions
  • Step #1 CRUST: Combine well the graham cracker crumbs, cinnamon, powdered sugar, & melted butter.
  • Step #2 Press onto bottom & partway up sides of buttered 9" springform pan; chill in the fridge.
  • Step #3 FILLING: Soften unflavored gelatin in 1/4 c 7-up for 4 mins.
  • Step #4 In a saucepan mix pie filling, sugar, beaten eggs & water.
  • Step #5 Blend well.
  • Step #6 Add 1-1/4 c 7-up & bring just to a boil over med-heat/flame stirring constantly; remove this from heat.
  • Step #7 Stir in softened gelatin; cool 3 mins.
  • Step #8 Add 1/2 c of this warm mixture to softened cream cheese; mash together.
  • Step #9 Mix together with remaining 7-up mixture & stir until well mixed.
  • Step #10 Turn into chilled crust & chill for at least 8 hrs.
  • Step #11 Remove from pan & add topping.
  • Step #12 TOPPING: Brush top of chilled cheesecake with melted jelly.
  • Step #13 Arrange strawberries upright on cake & spoon any remaining melted jelly over them.
