Ingredients
  • 1 c pecans (finely sliced) .
  • 2 c flour .
  • 1/2 c sour cream .
  • 1/2 c apricot jam .
  • 2 c shredded coconut .
  • 1/4 tsp salt .
  • 1 tsp vanilla extract .
  • 5 eggs .
  • 1 c butter (softened to room temp.) .
  • 2 c sugar .
  • 1 c dried apricots (finely sliced) .
  • 1 tsp baking soda

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Grease & flour a Bundt pan.
  • Step #3 Cream together butter & sugar In a large-ish mixing bowl until fluffy.
  • Step #4 Add eggs, one at a time, while continuing to beat.
  • Step #5 Add jam, sour cream, & vanilla.
  • Step #6 Next add flour, soda, & salt; beating all in well.
  • Step #7 Fold in coconut, pecans, & dried apricots by hand.
  • Step #8 Pour into the prepared Bundt pan.
  • Step #9 Bake for 55-60 mins.
  • Step #10 Cool in pan for 15 mins, then turn out on a wire rack to cool completely.
  • Step #11 * If desired you can glaze this cake, with a glaze made by melting together 1/2 c apricot jam with 3 tbsps orange juice.
