Sweet Potato And Spinach Curry Recipe

Ingredients
  • 1 tsp turmeric .
  • 500 g sweet potatoes, peeled & chunked .
  • 3 tbsps vegetable oil .
  • 250 g baby spinach, washed .
  • 1 large red chili, deseeded & sliced .
  • 1 red onion, sliced .
  • 400F ml coconut milk .
  • 2 garlic cloves, crushed .
  • 1 tbsp curry paste (you choice of strength)

Directions
  • Step #1 Cook the sweet potato in boiling water for 10 mins, drain & set aside.
  • Step #2 Heat the oil & fry the onion, garlic & tumeric over a gentle heat for 3 mins, add the chilli & paste & cook for another 2 mins.
  • Step #3 Add coconut milk & let simmer for 5 mins.
  • Step #4 Add the sweet potato & season this with salt if desired.
  • Step #5 Continue to simmer for a further 5 mins.
  • Step #6 Stir in spinach, cover the pan & let simmer for 2 - 3 mins until the spinach has wilted & the curry is hot throughout.
