Yogurt And Honey Panna Cotta Recipe

Ingredients
  • 1/2 c honey (to taste) .
  • 3 c fresh fruit (optional) .
  • 1 1/2 c heavy cream .
  • 1 1/2 c heavy cream .
  • 1 1/2 c good quality plain yogurt .
  • 1 (1/4 oz) envelope unflavored gelatin

Directions
  • Step #1 Soften gelatin in 1/2 c of heavy cream.
  • Step #2 Meanwhile, mix the honey & 1/2 c cream in a saucepan, bring to a boil & remove this from heat.
  • Step #3 Whisk in the cream/gelatin mixture, followed by the remaining cream.
  • Step #4 Whisk the new cream mixture into the yogurt in a separate bowl.
  • Step #5 Pour into 6 individual serving c/molds; or into a large mold.
  • Step #6 (I poured it into a large yogurt container.
  • Step #7 ).
  • Step #8 Refrigerate at least 6 hrs.
  • Step #9 Dip a mold in warm water to loosen the panna cotta; or spoon into bowls, & serve this with fresh fruit.
  • Step #10 The fruit really balances out the rich sweetness of the panna cotta.
  • Step #11 The cookbook also had the fruit drizzled with honey, I found that to be too sweet.
