Ingredients
2/3 c water .
6 tbsps butter .
1/2 c sugar .
1 (8 oz) container cream-style cottage cheese .
1 egg .
3 1/2 c flour (about) .
2 (1/4 oz) packages dry yeast .
1 (8 oz) package cream cheese (softened) .
1 egg yolk (save the white to put on braid before baking) .
1 tsp grated lemon peel .
1/2 tsp salt .
1/2 c confectioners' sugar .
FILLING
Directions
Step #1 Combine sugar, yeast, salt, & 1 c flour in a bowl.
Step #2 In a saucepan heat the butter & water until very warm (but not too hot as that will kill the yeast--about 115 degrees).
Step #3 With mixer on lowish speed, beat the liquid into the dry ingredients & then at medium speed, beat for 2 mins.
Step #4 Beat in the egg & 3/4 c flour & beat for 2 more mins.
Step #5 Stir in 1 1/4 c flour & then turn out on a floured board & knead adding flour if you need it.
Step #6 Put into a greased bowl & rise for 1 hr.
Step #7 Meanwhile prepare the filling.
Step #8 FILLING:.
Step #9 Press the cottage cheese through a fine seive into a bowl.
Step #10 Beat on lowish speed with cream cheese, lemon peel, confectioners sugar, & egg yolk till well mixed.
Step #11 BACK TO THE DOUGH:.
Step #12 Punch down the dough & cover & let rest for 15 mins.
Step #13 Grease a large cookie sheet.
Step #14 Roll dough out to a to 12x15 rectangle.
Step #15 Spread the filling in a 4" strip lengthwise down the center.
Step #16 IT IS AT THIS POINT YOU WOULD PUT THE CHERRY PIE FILLING--AS MUCH AS YOU WANT--ON TOP OF THE CHEESE.
Step #17 Cut dough on both sies of filling crosswise into 1" strips.
Step #18 Place strips at an angle across filling, alternating sides for braided effect.
Step #19 Place braid on cookie sheet; cover & let rise till double.
Step #20 Beat an egg white & brush on braid.
Step #21 Bake in 350 degree oven for 20 mins or till browned.
Step #22 Cool 15 mins.
Step #23 If you want to drizzle some thin icing on top, that is also good.
