Ricotta, Feta And Spinach Stuffed Salmon Recipe

Ingredients
  • 1/4-1/3 c fat-free Miracle Whip .
  • 1/2 a lemon, juice of .
  • 1 tsp ground pepper .
  • 1 c spinach .
  • 200 g ricotta cheese .
  • 125 g feta cheese .
  • 1 1/2 lbs salmon fillets

Directions
  • Step #1 Butterfly salmon fillet by inserting knife into side of fillet & running it lengthwise to cut salmon open like a bun making sure not to cut all the way through(salmon should remain in one piece).
  • Step #2 In small bowl mix cheeses & pepper till smooth.
  • Step #3 Spread on one half of salmon.
  • Step #4 Layer spinach on top of cheese mixture & fold t op half of fillet over filling.
  • Step #5 Spoon miracle whip on top of fillet & squeeze lemon juice over top.
  • Step #6 Bake at 375F in a greased & covered casserole dish for 15-20 mins until fish is cooked through & flakes easily with a fork.
