Beef Goulash Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 2 1/2 c yukon gold potatoes, peeled & cubed .
  • 1 1/2 lbs boneless chuck roast, trimmed & cut into small pieces .
  • 2 bay leaves .
  • 4 c onions, sliced .
  • 1/4 c all-purpose flour .
  • 1 (14 oz) can reduced-fat beef broth .
  • 1 c tomatoes, sliced .
  • 1/2 c water .
  • 1 tbsp white wine vinegar .
  • 2 tbsps paprika .
  • 1 tbsp butter

Directions
  • Step #1 Dredge beef in flour; sprinkle with 1/2 tsp salt & 1/4 tsp pepper.
  • Step #2 Melt butter in a Dutch oven over medium-high heat.
  • Step #3 Add beef; cook 8 mins, browning on all sides.
  • Step #4 Remove beef from pan.
  • Step #5 Add onion & garlic to pan; sauté 10 mins or until lightly browned.
  • Step #6 Stir in paprika & vinegar; cook for 2 mins.
  • Step #7 Return beef to pan.
  • Step #8 Add the tomato & bay leaves; cook 3 mins.
  • Step #9 Add water & broth; bring to a boil.
  • Step #10 Add potatoes, lower heat, cover & let simmer for 2 hrs.
