Tortillas Roll Ups With Smoked Salmon Spread Recipe

Ingredients
  • 8 oz ricotta cheese .
  • 1 c watercress leaves or 2 c shredded lettuce or raw spinach .
  • 1/4 tsp pepper .
  • 1 tbsp grated white horseradish .
  • 4 (9 inch) flour tortillas .
  • 2 tbsps sour cream or plain yogurt .
  • 8 oz smoked salmon .
  • 2 tbsps lemon juice

Directions
  • Step #1 Cut salmon into pieces & chop in a food processor/blender with horseradish, lemon juice & pepper.
  • Step #2 Blend in ricotta.
  • Step #3 Add enough sour cream or yogurt to make a spreadable consistency.
  • Step #4 Arrange tortillas on counter in a single layer.
  • Step #5 Divide salmon mixture & spread over tortillas.
  • Step #6 Top with watercress, leaving a 1 inch border at the top so the roll will hold.
  • Step #7 Roll up tightly.
  • Step #8 Wrap & put in the fridge until ready to serve.
  • Step #9 Just before serving, trim off ends of rolls.
  • Step #10 Slice each roll this into 8 pieces.
  • Step #11 Arrange on serving platter cut side up.
  • Step #12 For a pretty presentation, slice on an angle.
  • Step #13 Makes 32 slices.
  • Step #14 A lighter side: Use low fat ricotta or yogurt cheese; be sure to use yogurt instead of sour cream.
