Rustic Country Flatbread With Added Goodies! Recipe

Ingredients
  • 1 1/2 c wheat flour .
  • 1 1/2 tsps salt .
  • 1/2 c dice ham (I used proscuitto) or crumbled bacon .
  • 1/2 c shredded cheddar cheese (or cheese of choice) .
  • 4-4 1/2 c white flour .
  • 1 c boiling water .
  • 2 tsps baking powder .
  • 1/2 c butter, softened .
  • 1 c buttermilk .
  • 1/2 c canned mushrooms (drained) or sauteed mushrooms .
  • 1 tsp baking soda

Directions
  • Step #1 Heat oven to 400F degrees.
  • Step #2 In large bowl mix all of wheat flour/about 3 1/2 c white flour, butter & water (the extra c of white flour is for your board & easy handling).
  • Step #3 Let stand until cool (about 5 mins).
  • Step #4 Stir in remaining ingredients (including the mushrooms, cheese & ham/proscuitto/bacon) using enough flour to make dough easy to handle.
  • Step #5 Turn dough onto lightly floured surface & knead about 5 mins.
  • Step #6 Divide dough in quarters.
  • Step #7 Roll out each quarter on floured surface as thin as possible.
  • Step #8 Flat breads will be irregular in shape.
  • Step #9 Place on ungreased cookie sheets (you might have to bake in two stages).
  • Step #10 Bake 20 mins, depending on thickness, or until golden brown.
  • Step #11 This makes 4 8-10" rounds.
