Pine Nut Rice Pilaf (piñon Rice Pilaf) Recipe

Ingredients
  • 1 tsp oregano .
  • 1 tbsp olive oil .
  • 2 c chicken stock .
  • 1/2 tsp ground cumin .
  • 1 c long-grain rice .
  • 2 garlic cloves, minced .
  • 1/2 c pine nuts (pinons)

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Heat the olive oil over med-heat/flame, in an ovenproof pan.
  • Step #3 Add the garlic, cumin & oregano & cook for a min.
  • Step #4 (Don’t let garlic brown).
  • Step #5 Add the rice & pine nuts & stir this to coat well.
  • Step #6 Add the chicken stock, stirring well & raise the heat to high.
  • Step #7 When the liquid comes to a boil, cover the pot & put in the oven for 20 mins.
  • Step #8 Remove from the oven.
  • Step #9 Stir to fluff & serve.
