Ingredients
1 tsp oregano .
1 tbsp olive oil .
2 c chicken stock .
1/2 tsp ground cumin .
1 c long-grain rice .
2 garlic cloves, minced .
1/2 c pine nuts (pinons)
Directions
Step #1 Preheat the oven to 350 degrees F.
Step #2 Heat the olive oil over med-heat/flame, in an ovenproof pan.
Step #3 Add the garlic, cumin & oregano & cook for a min.
Step #4 (Don’t let garlic brown).
Step #5 Add the rice & pine nuts & stir this to coat well.
Step #6 Add the chicken stock, stirring well & raise the heat to high.
Step #7 When the liquid comes to a boil, cover the pot & put in the oven for 20 mins.
Step #8 Remove from the oven.
Step #9 Stir to fluff & serve.
