Ingredients
1/2 c golden raisins .
4 anchovy fillets .
1 dash saffron .
1/2 c pine nuts .
1 1/2 lbs fennel bulbs, thickly sliced .
1 c breadcrumbs .
2 lbs fresh sardines .
salt & pepper .
1 lb bucatini pasta .
2 onions, finely sliced .
1/2 c olive oil
Directions
Step #1 Preheat oven to 350°F.
Step #2 Remove heads & tails from half the sardines.
Step #3 Cut in 1 inch pieces.
Step #4 Leave second half intact.
Step #5 Wash & trim fennel.
Step #6 Put into pan with about 8 c cold, salted water.
Step #7 Bring to a boil & cook this until tender, about 5- 8 mins.
Step #8 Remove with slotted spoon, drain in colander, then carefully squeeze out water.
Step #9 Chop roughly.
Step #10 Reserve cooking water.
Step #11 Heat 1/4 c oil in frying pan.
Step #12 Sauté onions over med-heat/flame until golden.
Step #13 Add sliced sardines & anchovies.
Step #14 As they cook, crush sardines with back of spoon to make a thick paste.
Step #15 Add pine nuts, raisins, saffron, salt & pepper.
Step #16 In a separate pan, heat remaining oil & lightly sauté the fennel, removing to a separate bowl.
Step #17 Sauté the remaining whole sardines.
Step #18 Cook until tender, about 10 mins, turning once carefully to not break sardines.
Step #19 Using fennel water, boil pasta until al dente, about 10 -= 12 mins.
Step #20 Drain.
Step #21 Put in bowl & dress with half the sardine sauce.
Step #22 Put a layer of dressed pasta in an ovenproof casserole.
Step #23 On top of that, put a layer of fennel, then a a layer of whole sardines with extra sauce.
Step #24 Continue until ingredients are used up, ending with a layer of bucatini.
Step #25 Cover up with breadcrumbs.
Step #26 Sprinkle top breadcrumbs over top.
Step #27 Cover up & bake in preheated 350°F oven 15 - 20 mins.
Step #28 Pasta may be served hot or cold.
