Shamrock Irish Onion Soup Recipe

Ingredients
  • 2 tsps sugar .
  • 2 (14 1/2 oz) cans beef broth .
  • 4 oz grated cheddar cheese or parmesan cheese (1 c, finely grated) .
  • 8 leeks, white & pale green parts only, split lengthwise & cut crosswise into 1/4-inch slices (about 4 c) .
  • 3-4 garlic cloves, minced .
  • 1 onion, halved, sliced crosswise .
  • 1/4 c butter .
  • 1/2 tsp pepper .
  • 1/2 c Irish whiskey .
  • 1 egg .
  • 1 sheet frozen puff pastry, thawed (1/2 of 17-1/2 oz. package)

Directions
  • Step #1 Wash leeks well under running water, separating layers with your fingers, as they can be very sandy.
  • Step #2 Slice & check over again for sand.
  • Step #3 In pot, melt butter over med-heat/flame.
  • Step #4 Add sliced leeks, onion & garlic; cook 8 mins.
  • Step #5 Add sugar & pepper.
  • Step #6 Reduce heat to low; cook, stirring 25-30 mins.
  • Step #7 Add whiskey; cook scraping up browned bits, about 3 more mins.
  • Step #8 Add broth & let simmer 15 mins.
  • Step #9 PASTRY:.
  • Step #10 On floured surface, unfold pastry.
  • Step #11 With 3" shamrock cookie cutter, sharply cut 6 shamrocks.
  • Step #12 Place on ungreased baking sheet.
  • Step #13 Beat egg with 1 T.
  • Step #14 of water & brush over shamrocks.
  • Step #15 Freeze 20 mins.
  • Step #16 Meanwhile, preheat your trusty oven to 375; remove shamrocks from freezer & bake 15 mins.
  • Step #17 Cool on baking sheet on rack.
  • Step #18 NOTE: If you have no shamrock cookie cutter, use a 1" round sharp cookie cutter.
  • Step #19 Using firm downward pressure, cut 18 circles from pastry.
  • Step #20 (Don't twist) Use a knife to cut 6 1-1/2" x 1/4" strips for stems.
  • Step #21 On ungreased baking sheet, form shamrocks by wetting edges of one circle & attaching one strip for the stem.
  • Step #22 Lay 2 more circles, edges touching, slightly overlapping first circle.
  • Step #23 Repeat with remaining circles & stems to form 5 more shamrocks.
  • Step #24 Brush with egg wash & proceed as directed above.
  • Step #25 To serve, divide hot soup among six 1 c heated bowls.
  • Step #26 Sprinkle top with finely grated cheddar or any favorite cheese until it melts slightly.
  • Step #27 Float puff pastry shamrock on top & serve.
