Thai Shrimp-and-pasta Salad Recipe

Ingredients
  • 2 tbsps unsalted dry roasted peanuts, sliced .
  • 1 c boston lettuce leaves, thinly sliced .
  • 1/2 lb medium shrimp, cooked & peeled .
  • 1/4 c fresh lime juice .
  • 2 tsps vegetable oil .
  • 2 tbsps fresh cilantro, sliced .
  • 1/4 c fresh cilantro leaves .
  • 2 garlic cloves, minced .
  • 2 oz linguine .
  • 2 1/2 tsps sugar .
  • 1 tsp fresh ginger, peeled & grated .
  • 2 tbsps fish sauce .
  • 1 tbsp green onions, sliced .
  • 1/2 c carrots, shredded

Directions
  • Step #1 Cook pasta in boiling water for 9 1/2 mins, omitting fat & salt.
  • Step #2 Add carrots & cook an extra 30 seconds.
  • Step #3 Drain & rinse with cold water.
  • Step #4 Combine pasta mixture, shrimp, lettuce, cilantro leaves & peanuts In a large-ish bowl.
  • Step #5 Toss well.
  • Step #6 Combine lime juice & remaining 7 ingredients in a jar.
  • Step #7 Cover up tightly & shake vigorously.
  • Step #8 Pour over pasta mixture, tossing carefully to coat.
