Roasted Butternut Squash With Garlic Mushrooms Recipe

Ingredients
  • 300F g baby button mushrooms .
  • For the squash .
  • 1/2 lemon, juice of .
  • 2 tbsps olive oil .
  • 2 (700 g) butternut squash .
  • 2 tbsps olive oil .
  • For the mushrooms .
  • 50 g butter .
  • 2 garlic cloves, crushed

Directions
  • Step #1 Heat oven to 220C/425°F.
  • Step #2 Cut each squash in half & scoop out the seeds & membranes.
  • Step #3 Score a criss cross pattern in each squash & place on a baking tray cut side up.
  • Step #4 Drizzle with the olive oil, dot with the butter & season if desired.
  • Step #5 Cook for 40 mins on top shelf.
  • Step #6 Place the mushrooms in an ovenproof dish with all the other ingredients & place of the shelf below the squash for its last 15 mins of cooking.
  • Step #7 Serve with Broccoli & roast new potatoes.
