Curried Mustard Greens With Kidney Beans Recipe

Ingredients
  • 1 pinch red pepper flakes
  • 2 medium shallots, sliced
  • 1 tbsp ghee (clarified butter)
  • 1 (15 oz) can kidney beans, drained & rinsed
  • 1 (15 oz) can tomato sauce
  • 1 tbsp minced fresh ginger root
  • 1 bunch mustard greens
  • 1/2 c half & half
  • 2 tsps curry powder

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Place greens in the pot, & cook 7 mins, cover, or just until tender.
  • Step #3 Drain, & rinse under cold water.
  • Step #4 Heat the ghee in a skillet over medium-high heat, & cook the shallots until lightly brown.
  • Step #5 Stir in ginger, & season this with red pepper.
  • Step #6 Mix in greens, tomato sauce, kidney beans, & curry powder.
  • Step #7 Stir in the half & half, & continue cooking until heated through.
