Chewy Gluten-free Chocolate Chip Cookies Recipe

Ingredients
  • 1 large egg .
  • 1/4 c tapioca flour .
  • 1/4 c sweet rice flour (also called sticky rice flour or glutinous rice flour) .
  • 1/2 c brown sugar or turbinado sugar .
  • 1/2 tsp baking soda .
  • 1 c chocolate chips .
  • 1/4 c softened unsalted butter .
  • 1/2 tsp vanilla .
  • 1 c all-purpose gluten-free flour .
  • 1/2 tsp salt .
  • 2 tbsps almond meal .
  • 1/2 c white sugar

Directions
  • Step #1 Preheat oven to 375 F degrees.
  • Step #2 Blend butter, sugars, egg & vanilla with a wooden spoon until creamy.
  • Step #3 In a separate bowl, mix flours, baking soda, almond meal & salt.
  • Step #4 Fold dry ingredients into wet ingredients & mix well.
  • Step #5 Grease a baking sheet.
  • Step #6 Drop a tbsp of the batter at a time onto the cookie sheet, leaving ample room between cookies.
  • Step #7 Bake for 10 mins.
  • Step #8 Remove from oven & allow to sit for 5 mins before transferring carefully to cooling rack.
