Low Carb German-style Pork Roast Recipe

Ingredients
  • 1 tbsp olive oil .
  • 1 tsp salt .
  • 1 1/2 tsps marjoram, dried .
  • 1 tbsp caraway seeds .
  • 2 tbsps white wine vinegar .
  • 4 tsps arrowroot .
  • 1 (8 oz) carton sour cream .
  • 1/2 c water .
  • 1/2 tsp pepper .
  • 3 lbs boneless pork shoulder

Directions
  • Step #1 Combine caraway seeds, marjoram, salt & pepper.
  • Step #2 sprinkle mixture over all sides of meat.
  • Step #3 Rub this into the roast with your fingers.
  • Step #4 In a large skillet brown meat on all sides in hot oil.
  • Step #5 Drain off fat.
  • Step #6 Place meat in slow cooker (aka crockpot).
  • Step #7 Add water to skillet; bring to boiling, stirring to loosen browned bits from bottom of skillet.
  • Step #8 Pour skillet juices & vinegar into cooker.
  • Step #9 Cover up & cook on low setting for 7 hrs or high heat for 3/1/2 to 4 1/2 hrs.
  • Step #10 Remove meat from cooker, & keep warm.
  • Step #11 For gravy, skim fat from juices; measure 1/1/4 c juices (add water if necessary to make 1 1/4 c).
  • Step #12 Pour juices into a small saucepan; bring to boiling.
  • Step #13 In a medium bowl mix sour cream & arrowroot.
  • Step #14 Stir hot juices into sour cream mixture; return to saucepan.
  • Step #15 Cook & stir over med-heat/flame until mixture is thickened.
  • Step #16 (Do not boil).
  • Step #17 Slice meat & serve this with gravy.
