Lettuce-wrapped Beef And Pepper Fajitas Recipe

Ingredients
  • 1 tbsp lime juice or lemon juice .
  • 1 onion, sliced .
  • 1 tsp chili powder .
  • 1 tsp vegetable oil .
  • 2 garlic cloves, minced .
  • 8 lettuce leaves .
  • 1/4 c light sour cream .
  • 1/2 c salsa .
  • 1/2 tsp salt .
  • 1 red pepper, thinly sliced .
  • 1 green pepper, thinly sliced .
  • 1 lb top sirloin steaks, for grilling

Directions
  • Step #1 Trim fat off steak; sprinkle with half each of the chili powder & salt.
  • Step #2 Broil steak, turning once, until browned but still pink inside, about 6 mins.
  • Step #3 Transfer to cutting board & tent with foil wrap; let this stand for 10 mins before slicing thinly across the grain.
  • Step #4 Meanwhile, brush the vegetable oil over nonstick skillet over med-heat/flame.
  • Step #5 Cook red & green peppers, sliced onion, minced garlic & remaining chili powder & salt stirring every once in awhile, until tender-crisp, about 4 mins.
  • Step #6 Stir in salsa & lime juice.
  • Step #7 Mound vegetables, steak & sour cream in each lettuce leaves; roll up.
