Banana Breakfast Coffee Cake Recipe

Ingredients
  • 2/3 c sugar .
  • 1 tsp ground cinnamon .
  • 1/2 c all-purpose flour .
  • 2 c all-purpose flour .
  • 2 eggs .
  • 1 tsp baking powder .
  • 1/2 c unsalted butter, softened .
  • 1/2 tsp salt .
  • 1/2 tsp ground nutmeg .
  • 1/2 c finely sliced walnuts .
  • 1/3 c 2% low-fat milk .
  • 6 tbsps cold unsalted butter .
  • Topping .
  • 1 c mashed very ripe bananas .
  • 1 tsp baking soda .
  • Cake .
  • 1/2 c firmly packed light brown sugar .
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350°F Coat a 9-inch-square baking pan with cooking spray.
  • Step #2 For the topping, brown sugar, mix flour, cinnamon & butter in a food processor/blender & process until mixture resembles fine crumbs.
  • Step #3 Stir in walnuts.
  • Step #4 For the cake, baking soda, mix flour, baking powder, nutmeg & salt in a medium bowl.
  • Step #5 Beat butter with a mixer at medium speed about 30 seconds or until smooth.
  • Step #6 Gradually add sugar & beat 3 to 4 mins or until fluffy.
  • Step #7 Add eggs 1 at a time, beating well after each.
  • Step #8 Add vanilla & bananas & beat until well mixed.
  • Step #9 Add flour mixture alternately with milk, mixing after each addition only until smooth.
  • Step #10 Pour batter into prepared pan; sprinkle with topping.
  • Step #11 Bake about 35 mins or until toothpick inserted in center comes out clean.
  • Step #12 Cool in pan on a wire rack.
  • Step #13 Serve warm or at about room temp.
