Horseradish-crusted Beef Tenderloin Recipe

Ingredients
  • 2 lbs trimmed beef tenderloin, preferably center-cut (see Note) .
  • 1 tbsp extra-virgin olive oil .
  • 1 tsp Dijon mustard .
  • 2 tsps fresh ground pepper .
  • 2 tbsps prepared horseradish .
  • 1 tsp kosher salt

Directions
  • Step #1 Preheat oven to 400°F Combine horseradish, oil & mustard in a small bowl.
  • Step #2 Rub tenderloin with salt & pepper; coat with the horseradish mixture.
  • Step #3 Tie with kitchen string in 3 places.
  • Step #4 Transfer to a small roasting pan.
  • Step #5 Roast until a thermometer inserted into the thickest part of the tenderloin registers 140°F for medium-rare, 5 to 45 mins.
  • Step #6 Add 5 to 10 mins for medium-well.
  • Step #7 Transfer to a cutting board; let rest for 5 mins.
  • Step #8 Remove the string.
  • Step #9 Slice & serve this with Creamy Horseradish Sauce.
  • Step #10 Note: You'll need 2 lbs of trimmed tenderloin for this recipe.
  • Step #11 Ask your butcher to remove the extra fat, silver skin & the chain (a lumpy, fat-covered piece of meat that runs along the tenderloin).
  • Step #12 If you buy untrimmed tenderloin, then use a sharp knife to trim the silver skin, start with about 2 1/2 lbs, fat & chain.
