Applesauce Oatmeal Muffins Recipe

Ingredients
  • 1 tsp baking powder .
  • 1/2 tsp baking soda .
  • 1 c whole wheat flour .
  • 1/2 c Splenda granular .
  • 1 tsp sugar .
  • 1 c water .
  • 1 tsp cinnamon .
  • 2 egg whites .
  • 1/2 c unsweetened applesauce (Motts Natural) .
  • 1 c rolled oats (not instant) .
  • 1/2 tsp salt .
  • raisins (optional) or nuts (optional)

Directions
  • Step #1 Soak the oats in water for about one hr.
  • Step #2 Preheat the oven to 400F degrees.
  • Step #3 Spray muffin pan with cooking spray.
  • Step #4 Combine the oat mixture with the applesauce & egg whites, & mix until mixd.
  • Step #5 In a separate bowl measure & whisk the dry ingredients together.
  • Step #6 Add wet ingredients to dry & mix until just mixd.
  • Step #7 Add nuts or raisins if desired.
  • Step #8 Do not over mix the batter or the muffins will be tough.
  • Step #9 Spoon muffin mixture into muffin pan.
  • Step #10 Combine the cinnamon & sugar & top each muffin with some of the mixture.
  • Step #11 Bake for 20-25 mins or until done.
  • Step #12 Remove from pan, cool & enjoy.
  • Step #13 These can be frozen & reheated in the microwave for a quick breakfast.
