2 c mild cheese, grated (I used Tilsiter & a young, mild Pecorino) .
1/2 tsp salt .
2 lbs large shrimp, headless (1 kg) .
1 medium onion .
1 tsp chili pepper flakes, dried, hot .
oil (for frying) .
1/2 tsp salt .
1 green bell pepper
Directions
Step #1 Start with the shrimps: depending on how you bought them, they might need picking over or peeling.
Step #2 Try to keep tails on.
Step #3 Rinse well.
Step #4 Remove seeds & ribs from bell peppers & cut flesh into bite-sized pieces.
Step #5 Peel & chop the onion.
Step #6 (Use any colour bell peppers you have).
Step #7 Use a wok over a high flame: it's easiest.
Step #8 Fry the onions & peppers in oil, stirring often, until they are soft & "reduced" & threatening to burn - about 20 mins.
Step #9 During the frying, sprinkle in the dried hot pepper flakes.
Step #10 The wok should be quite hot at this stage, so add all the cleaned shrimps in one go.
Step #11 You might have to add more oil.
Step #12 Stir, moving the shrimps around, until they have all become pinky white & curled up.
Step #13 (If you feel the wok would be too crowded, add a little more oil, remove the pepper-onion mixture to a bowl, heat well, & then cook the shrimps on their own).
Step #14 Don't overcook the shrimps.
Step #15 While they're cooking, add the fish & oyster sauce, & the lime or lemon juice.
Step #16 When shrimps are cooked, take wok off heat.
Step #17 If you removed the pepper-onion mixture, stir back into shrimps.
Step #18 In another medium pot, put over a high heat, whisk the flour into the milk, & keep whisking until milk boils & thickens a little.
Step #19 Remove from heat, & stir in the the cheese until it melts & the sauce is smooth.
Step #20 (Cheese do not like being boiled).
Step #21 Stir in the nutmeg, garlic & salt.
Step #22 Add this cheese sauce to the shrimp mixture & fold in well.
Step #23 Remove to an oven dish, cover, & keep warm until needed.
Step #24 You could garnish it with snipped spring onions or chives.
Step #25 Nice served with brown basmati rice.
Step #26 I also cooked sliced green beans to which I added 1 wheel, crumbled, of feta cheese.
Step #27 *The cheese: I used two mild cheeses; felt as if cheddar would be too strong.
Step #28 Use whatever you have, or cheese bits you need to use up.
