Creamy Pineapple Pie Recipe

Ingredients
  • 1/2 tsp vanilla extract
  • 1 c sugar, divided
  • 1/2 tsp salt
  • 1 (9 inch) unbaked pastry shell
  • 1/4 c sliced pecans
  • 1 (8 oz) package cream cheese, softened
  • 1 (8 oz) can crushed pineapple, undrained
  • 2 eggs
  • 1/2 c milk
  • 1 tbsp cornstarch

Directions
  • Step #1 In a mixing bowl, beat the cream cheese, 1/2 c sugar & salt until smooth.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Blend in milk & vanilla; set aside.
  • Step #4 In a small saucepan, mix cornstarch & remaining sugar.
  • Step #5 Stir in pineapple; bring to a boil, stirring constantly.
  • Step #6 Boil for 2 mins.
  • Step #7 Pour into pastry shell; spoon cream cheese mixture over top.
  • Step #8 Sprinkle top with pecans.
  • Step #9 Bake at 400F degrees F for 10 mins.
  • Step #10 Reduce heat to 325F degrees F; bake 45-50 mins more or until center is set.
  • Step #11 Cool completely; chill before serving.
