Chili Rubbed Flank Steak Recipe

Ingredients
  • 2 tbsps cider vinegar .
  • 1 tbsp chili powder .
  • 1/4 c olive oil .
  • 1 (18 oz) package plain prepared polenta .
  • 1 1/2 lbs flank steaks .
  • pepper .
  • 1 tbsp sugar .
  • 4 tsps olive oil .
  • coarse salt .
  • 6 c shredded red cabbage

Directions
  • Step #1 Heat broiler; set rack 4 inches from heat.
  • Step #2 Whisk vinegar & 3 tsps oil together In a large-ish bowl, then add the cabbage.
  • Step #3 Spice up with salt & pepper & toss thoroughly.
  • Step #4 Refrigerate.
  • Step #5 Slice polenta crosswise into 8 equal pieces.
  • Step #6 Heat 1/4 c oil In a large-ish skillet on medium heat, then add polenta & cook this until golden on both sides, about 10 mins per side.
  • Step #7 Remove to paper towel, season to taste.
  • Step #8 Combine chili powder, 1 tsp salt, sugar, & 1/4 tsp pepper.
  • Step #9 Place steak on a broiler-proof pan.
  • Step #10 Coat both sides with remaining tsp oil & spice mixture.
  • Step #11 Broil without turning about 10 mins for medium-rare, then let rest 5 mins.
  • Step #12 Slice thinly & serve this with cabbage salad & polenta rounds.
