Hot Chicken Super Bowls Recipe

Ingredients
  • 1/2 tsp ground black pepper .
  • 2 tbsps parsley, sliced .
  • 3 c cooked chicken breasts, sliced (I poached 3 breast halves) .
  • 3/4 c low-fat sour cream .
  • 1 c finely crushed potato chips, low fat Ruffles preferred .
  • 1/2 tsp paprika .
  • 2 stalks celery, finely sliced .
  • 1/4 c light mayonnaise .
  • 1/2 c sliced almonds .
  • 1 c grated low-fat cheddar cheese .
  • 1 medium onion, finely sliced .
  • 1 tbsp butter, melted .
  • 12 French rolls .
  • 1 tbsp lemon juice

Directions
  • Step #1 Heat oven to 350ºF.
  • Step #2 Mix chicken, celery, onion, pepper, cheese, almonds, parsley, & crushed chips.
  • Step #3 Blend mayo, sour cream & lemon juice; pour over chicken mixture & stir until mixed.
  • Step #4 Cut slices out of the center of the rolls & carefuly remove some of the inside bread (cook's snack)to make a "boat".
  • Step #5 Stuff rolls with the chicken mixture & place on a baking sheet.
  • Step #6 (suggest lining pan with foil wrap for easier clean-up).
  • Step #7 Drizzle with melted butter & top this with more crushed chips if desired.
  • Step #8 Sprinkle top with paprika.
  • Step #9 (you could also sprinkle with more cheese if you want).
  • Step #10 Bake for 10-12 mins until chicken is hot, cheese is melted & rolls are browned.
  • Step #11 To top off your dining experience, serve atop a bed of Frito-Lay Funyuns.
