Lime-and-honey Glazed Salmon With Warm Black Bean And Corn Salad Recipe

Ingredients
  • 1 tsp ground cumin .
  • 1 medium onion (sliced) .
  • 1 (15 oz) can black beans (rinsed & drained) .
  • 1 tsp chili powder .
  • 3 tbsps honey .
  • 2 garlic cloves .
  • 4 (6 oz) salmon fillets .
  • 1 tsp red pepper flakes .
  • 1 red bell pepper (cored seaded & sliced) .
  • 1 (10 oz) box frozen corn (defrosted) .
  • 1/2 c chicken stock or broth .
  • 4 tbsps extra-virgin olive oil .
  • 6 c baby spinach .
  • 2 tbsps fresh cilantro (sliced)

Directions
  • Step #1 *black bean corn salad.
  • Step #2 Preheat medium to large skillet over med-heat/flame with 2 tbsp of olive oil.
  • Step #3 Add onions, cummin, garlic, red pepper flakes, salt & pepper.
  • Step #4 Stir every once in awhile for 3 mins.
  • Step #5 Add bell pepper & corn & cook for an extra min.
  • Step #6 Add Chicken stock & continue to cook for an extra 2 mins.
  • Step #7 Add black beans & cook this until beans are just heated through.
  • Step #8 Remove skillet from heat & add juice of 1 lime, cilantro & spinach.
  • Step #9 Toss to wilt spinach.
  • Step #10 *Lime & honey glazed salmon.
  • Step #11 Preheat a medium non-stick skillet over medium high heat with 2 tbsp of olive oil.
  • Step #12 In shallow dish mix: juice of 1 lime, chilli powder, honey, salt & pepper.
  • Step #13 Add salmon fillets & toss to coat.
  • Step #14 Add salmon to hot skillet & cook this until done (3-4 mins each side).
  • Step #15 Serve Salmon over bed of black bean corn salad.
