Bob's Favorite Hot Salsa (hot Water Bath Canning Method) Recipe

Ingredients
  • 1/2-1 c fresh cilantro, sliced (optional) .
  • 3 tsps kosher salt .
  • 5 lbs tomatoes, blanched with skins removed, seeded & cored .
  • 1/2 tsp black pepper .
  • 1 c white vinegar .
  • 1 lb white onions, sliced .
  • 2 lbs green chili peppers, seeded & sliced

Directions
  • Step #1 Combine the tomatoes, peppers & onions & boil for 10 mins.
  • Step #2 Remove from heat & add in the remaining ingredients, mixing well.
  • Step #3 Fill hot pint jars to 1/2 inch of the top.
  • Step #4 Process for 15 mins in a hot water bath.
  • Step #5 Let cool & remove bands & store this in a cool dry place for up to 1 year.
