Cabbage & Potato Casserole Recipe

Ingredients
  • 1 large shallot, french, finely sliced .
  • 1 medium sweet onion, coarsely sliced .
  • 1 small green cabbage, coarsely sliced .
  • 1/4 c apple cider .
  • 1/8 c half-and-half .
  • 1 garlic clove, organic, finely sliced .
  • 1 tbsp brown sugar .
  • 1 1/2 tsps cider vinegar .
  • 1/2 tsp salt .
  • 1/2 tsp red pepper flakes .
  • 1 granny smith apples, coarsely grated .
  • 1/4 c chicken stock .
  • 3 slices bacon, thick, coarsely sliced .
  • 2 tbsps butter, cut into small peices .
  • 4 large potatoes, quartered, unpeeled .
  • 1 large egg, lightly beaten .
  • 1/8 c fresh parsley, coarsely sliced

Directions
  • Step #1 Cook bacon crisp.
  • Step #2 Reserve.
  • Step #3 Saute onion, shallot, garlic, apple & cabbage for 20 mins.
  • Step #4 Turn up heat & add the stock, cider, vinegar & sugar.
  • Step #5 Cook 10 mins, stirring frequently, until most of the liquid is gone.
  • Step #6 Boil potatoes in salted water for 20 mins until tender.
  • Step #7 Preheat oven to 400F degrees.
  • Step #8 Grease pan.
  • Step #9 Drain & mash the potatoes.
  • Step #10 With a fork mix in the butter, then milk & lastly the egg.
  • Step #11 Add the cabbage mixture, bacon, parsley & pepper flakes, mix well.
  • Step #12 Pour into baking dish & bake 20 mins.
