Mama C's Jambalaya Recipe

Ingredients
  • 2 small yellow onions, coarsely sliced .
  • 2 garlic cloves, minced .
  • 2 tbsps bacon drippings .
  • 2 c ham, sliced .
  • 1 c long grain rice .
  • 2 1/2 tsps creole seasoning (to taste) .
  • 1 1/2 tbsps flour .
  • 1 (14 1/2 oz) can sliced tomatoes with juice .
  • 1 3/4 c water

Directions
  • Step #1 Melt bacon drippings in saucepan.
  • Step #2 Add flour & mix thoroughly.
  • Step #3 Cook, stirring, over med-heat/flame until lightly browned.
  • Step #4 Add onion & continue to cook, stirring frequently, until onion is translucent & flour is browned.
  • Step #5 Add garlic & cook for one min more.
  • Step #6 Add remaining ingredients & stir thoroughly to mix.
  • Step #7 Bring to a simmer, cover & cook about 40 mins, or until most of the liquid is absorbed & rice is done.
