Step #2 Place sugar, berries & lemon juice in medium saucepan.
Step #3 Heat over med-heat/flame, stirring carefully, until mixture boils & sugar is dissolved (about 5 mins).
Step #4 Remove from heat; allow this to cool slightly.
Step #5 PREPARE CHEESE:.
Step #6 While berry mixture is cooking or cooling: In a medium mixing bowl, stir this together cream cheese, honey & lemon zest until thoroughly mixed; set aside.
Step #7 TO ASSEMBLE:.
Step #8 Place 2 crepes on serving plate; spoon 1 tbsp cream cheese mixture & sliced macadamia nuts, if using, down the center of each crepe.
Step #9 Spoon approximately 1/4 c berry mixture over cream cheese.
Step #10 Fold 2 sides of each crepe up & turn over to form roll.
