Crispy Fried Chicken Recipe

Ingredients
  • 2 chickens, cut into serving pieces .
  • 2 tbsps paprika .
  • 1 tbsp cayenne .
  • 1 tbsp fresh ground black pepper .
  • 2 c flour .
  • oil (for frying) .
  • 1 quart buttermilk .
  • 5 tbsps kosher salt

Directions
  • Step #1 Place the chicken pieces into a large bowl, & pour the buttermilk to cover them.
  • Step #2 Cover up & put in the fridge for at least 3 hrs or overnight.
  • Step #3 In a large plastic bag, mix all of the dry ingredients.
  • Step #4 Heat the oil in a deep skillet to about 370 degrees.
  • Step #5 Take the chicken pieces out of the buttermilk, & shake them in the bag with the seasoned flour, 1-2 pieces at a time.
  • Step #6 Drop them in the hot oil deep enough to cover, & fry 6-8 mins; turn & continue cooking.
  • Step #7 Turn once more & cook this until the chicken is well browned & tender to the fork.
  • Step #8 Transfer the chicken to absorbent paper towels.
  • Step #9 Spice up with salt & pepper, if necessary.
  • Step #10 If serving the chicken later, allow this to cool completely before packing it up so that is stays crisp.
