Vegan Peanut Butter Chocolate Chip Cookies Recipe

Ingredients
  • 1 c brown sugar .
  • 1/2 c vegan margarine .
  • 1/3 c old fashioned oats .
  • 1 tsp vanilla extract .
  • 1 1/2 c all-purpose flour .
  • 1 tsp baking soda .
  • 1/2 c chocolate chips .
  • 1/4 c maple syrup .
  • 1 c peanut butter .
  • 2 egg substitute .
  • 1/4 tsp salt

Directions
  • Step #1 Mix dry ingredients (first 4) in a medium bowl.
  • Step #2 Blend peanut butter, margarine, syrup, sugar, egg replacer & vanilla with an electric mixer.
  • Step #3 (Tip: If you soften the margarine & peanut butter first by nuking it you can just mix it by hand).
  • Step #4 Add dry ingredient mixture to peanut butter mixture in two additions.
  • Step #5 Stir in sliced carob.
  • Step #6 Cover up & put in the fridge for about 30 mins, or until it is no longer sticky.
  • Step #7 Preheat oven to 350 degrees fahrenheit.
  • Step #8 Grease two large baking sheets.
  • Step #9 Roll balls of dough with hands into about 2-inch diameter balls.
  • Step #10 (Or make any size you want, just pay attention to baking time changes.
  • Step #11 ) Place on baking sheets & bake for about 12 mins.
  • Step #12 Cookies will be puffed & still very soft to the touch.
