Step #1 Soak the dried fruit for 1 1/2 hrs in strongly brewed tea.
Step #2 Line a 28 x 23cm / 11" x 9" baking tin with baking parchment & lightly grease with vegetable oil.
Step #3 Beat the egg & milk together.
Step #4 Mash the soaked fruit with a fork, then stir in the remaining ingredients.
Step #5 Spread the mixture in roasting tin/s.
Step #6 Bake in the centre of preheated oven at 170° for about 1 1/2 hrs until golden brown on top & springy to the touch in the centre.
Step #7 Turn out as soon as possible onto a wire rack.
