Cake: Irish Tea Cake Recipe

Ingredients
  • 200 g dates .
  • 160 g demerara sugar .
  • 1 large egg .
  • 450 g self raising flour .
  • 1 pint strong tea .
  • 200 g chewy banana chips .
  • 125 g sliced walnuts .
  • 125 g cranberries or raisins .
  • 2 tbsps milk

Directions
  • Step #1 Soak the dried fruit for 1 1/2 hrs in strongly brewed tea.
  • Step #2 Line a 28 x 23cm / 11" x 9" baking tin with baking parchment & lightly grease with vegetable oil.
  • Step #3 Beat the egg & milk together.
  • Step #4 Mash the soaked fruit with a fork, then stir in the remaining ingredients.
  • Step #5 Spread the mixture in roasting tin/s.
  • Step #6 Bake in the centre of preheated oven at 170° for about 1 1/2 hrs until golden brown on top & springy to the touch in the centre.
  • Step #7 Turn out as soon as possible onto a wire rack.
