Chocolate Chip Caramel Cookies Recipe

Ingredients
  • 3/4 c uncooked oats .
  • 1 c granulated sugar .
  • 1 tsp baking soda .
  • 1/2 tsp salt .
  • 3/4 c unsalted butter .
  • 1/2 c light brown sugar .
  • 1 tsp marshmallow extract (optional) .
  • 2 1/4 c all-purpose flour .
  • 1 c sliced pecans .
  • 1 egg yolk .
  • 1 c semisweet mini chocolate chips .
  • 2 tbsps heavy cream .
  • 1 1/2 tsps vanilla extract .
  • 1 1/2 c caramel filled Hersheys chocolate kisses .
  • 1 egg

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Melt butter, sugar, & brown sugar together in a microwave for 45 to 50 seconds on medium to low power, careful not to burn the butter.
  • Step #3 Let the butter-sugar mixture cool just a bit & mix in the egg & egg yolk.
  • Step #4 Add the vanilla & marshmallow extract, & the heavy cream.
  • Step #5 Stir & set aside.
  • Step #6 Sift dry ingredients together & fold into wet mixture carefully.
  • Step #7 Add chocolate chips, candies, oats & pecans.
  • Step #8 Using a 2 tbsp cookie scoop or an ice cream scoop, drop dough onto parchment-lined cookie sheet.
  • Step #9 Flatten slightly with a spatula.
  • Step #10 Bake for 12 to 15 mins.
  • Step #11 Cool on pan for 5-7 mins & then transfer to a wire rack to cool the rest of the way.
