Eggplant Parmesan With Garlic And White Beans Recipe

Ingredients
  • 2 c breadcrumbs .
  • 1/4 tsp sea salt (regular can be substituted) .
  • 1/3 c grated parmesan cheese (recommend using a mix of parmesan & romano) .
  • 1 head garlic .
  • 4 c tomato sauce (any brand will due, but I recommend my zesty tomato sauce!) .
  • 2 tsps olive oil .
  • 2 minced garlic cloves .
  • 4 egg whites .
  • 1 1/2 c low fat mozzarella .
  • 1 (14 oz) can white beans .
  • 2 large eggplants .
  • 2 tsps dried basil

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 in a flat bottom bowl, salt, whisk egg whites, 2 cloves garlic.
  • Step #3 in another bowl, mix bread crumbs, basil, & parmesean/romano mixture.
  • Step #4 lightly spray two baking sheets with olive oil & drizzle a small amount on the whole garlic head.
  • Step #5 cut eggplant into 1/2 inch rounds & dip into egg mixture then batter in bread crumbs.
  • Step #6 place eggplant & garlic head on baking sheets.
  • Step #7 cook this until tender (about 20 min on each side for the eggplant & 20-30 min total for garlic head).
  • Step #8 drain & rinse white beans.
  • Step #9 in 2 8x11 baking dishes, put a thin layer of tomato sauce.
  • Step #10 when garlic head is finished & cool enough to touch, peel out the cloves & mash them into the white beans to make a paste.
  • Step #11 put a layer of eggplant rounds on top of the tomato sauce.
  • Step #12 spread bean/garlic paste evenly on rounds.
  • Step #13 add half the cheese & a c of sauce.
  • Step #14 place the rest of the eggplant in a second layer.
  • Step #15 add any leftover bread crumbs, sauce & cheese.
  • Step #16 bake 25 min until cheese is bubbly.
