Chicken In Beer, Jamaican " Red Stripe " Recipe

Ingredients
  • salt & pepper (to taste) .
  • 2 c coconut cream .
  • 3 lbs chickens (cut into serving pieces) .
  • oil (for frying) .
  • 1 c jamaican red stripe beer .
  • 2 oz onions .
  • 1 large sweet pepper

Directions
  • Step #1 Brown chicken pieces in oil.
  • Step #2 After browning pour off excess oil, leaving two tbsps in pan.
  • Step #3 Return chicken to pan, pour in coconut cream & beer, leave to simmer over a very low flame for about 30 mins.
  • Step #4 Cut up onion & sweet pepper add to chicken & season this with salt & pepper.
  • Step #5 Allow to simmer another 30 mins or until chicken is tender & the liquid has been reduced to a gravy.
  • Step #6 If liquid dries out too quickly replenish with remaining beer in bottle.
