Rocket, Chicken & Sundried Tomato Salad Recipe

Ingredients
  • balsamic vinegar .
  • 1 (290 g) jar sun-dried tomatoes packed in oil, drained & halved .
  • extra virgin olive oil .
  • 12 slices pancetta .
  • 1 loaf ciabatta, loaf torn into chunks .
  • 4 chicken breasts .
  • 1 bunch fresh mint, leaves picked .
  • 50 g rocket (also known as arugula) .
  • olive oil

Directions
  • Step #1 Preheat the oven to 200C, 400F, gas mark 6.
  • Step #2 Spice up the chicken with salt & pepper then rub with a little olive oil.
  • Step #3 Place in a roasting tray & roast for 1 1/2 hrs or until cooked, adding the bread after 30 mins.
  • Step #4 Remove from oven & allow chicken to cool slightly.
  • Step #5 Tear the meat into long pieces with two forks & set aside.
  • Step #6 Fry the pancetta in a little oil until crispy.
  • Step #7 Toss the chicken with the croutons, mint leaves, rocket, tomatoes & pancetta.
  • Step #8 Spice up well; dress with a little balsamic vinegar & extra virgin olive oil.
