Spinach Tofu Stuffed Shells Recipe

Ingredients
  • 2 tbsps extra virgin olive oil .
  • 1/2 lb fresh spinach .
  • 1 (12 oz) container extra firm tofu .
  • 32 oz tomato sauce .
  • 16 oz soy cheese, shreds (or 16 oz rice, cheese shreds) .
  • 1 (16 oz) package jumbo pasta shells .
  • 1 tsp salt

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Bring water to a boil (enough to cook entire package of shells).
  • Step #3 Cook shells al dente according to package directions.
  • Step #4 Drain & let cool.
  • Step #5 In food processor/blender, crumble tofu.
  • Step #6 Add salt & olive oil.
  • Step #7 Blend to a smooth consistency, not unlike melty ricotta cheese.
  • Step #8 Cook frozen spinach according to package directions or sautee fresh spinach in 2 tb olive oil.
  • Step #9 Add spinach to tofu mixture, making sure to thoroughly drain spinach, if necessary.
  • Step #10 Coat bottom of casserole pan with tomato sauce.
  • Step #11 Fill each jumbo shell with approx 1-2 tb of spinach tofu mixture (or more if you're feeling frisky).
  • Step #12 Place shells in casserole pan & cover with remaining sauce & a hefty layer of soy/rice cheese.
  • Step #13 Cover up with aluminum foil wrap & bake 15 mins.
  • Step #14 Uncover & bake for extra 20 mins or until cheese is melty & fantastic.
