Herb Butter
Ingredients
10 mushrooms (creminis, finely sliced) .
coarse salt & pepper .
2 tbsps butter .
4 sprigs fresh tarragon, leaves removed & sliced to about 2 T .
1 (32 oz) can chunky-style crushed tomatoes (or sliced tomatoes in puree) .
2 tbsps fresh flat leaf parsley, sliced to about 2 T .
2 tbsps extra-virgin olive oil .
2 tbsps butter, cut into small bits .
Herb & Butter Noodles .
3 small carrots, peeled & thinly sliced .
1 c dry red wine .
1/2 lb extra-wide egg noodles (cooked until just tender, about 6 mins) .
2 shallots, sliced .
2 sprigs fresh tarragon, leaves removed & sliced to about 1 T .
salt, to taste .
fresh ground pepper, to taste .
2 lbs chicken breasts or chicken thighs (or combination of both, cut into chunks, also it should be boneless & skinless) .
1/4 c sliced flat leaf parsley (a handful)
Directions
Step #1 In large skillet over medium high heat, warm the olive oil.
Step #2 Spice up the chicken, brown it in the oil for 2-3 mins on each side, & remove to a plate.
Step #3 Return pan to stove & reduce heat to medium.
Step #4 Add butter to the pan & saute the shallots, carrots & mushrooms.
Step #5 Saute for 3-5 mins until mushrooms darken & carrot bits are fork tender.
Step #6 Add tarragon & parsley & stir.
Step #7 Add wine & reduce liquid for 1-2 mins.
Step #8 Add tomatoes to the sauce & stir this to mix.
Step #9 Add chicken back to the pan & let simmer chicken in sauce for 6 mins or until chicken is cooked through & juices run clear.
Step #10 Serve chicken with herb & butter noodles & sugar snap peas, if desired.
Step #11 To make noodles, toss the cooked noodles with butter bits & herbs in a bowl until butter melts, about 1 min.
Step #12 Spice up noodles with salt & pepper.
