Stuffed Chicken Breast Marinara Recipe

Ingredients
  • 8 boneless skinless chicken breasts (lbed thin) .
  • 1/2 (10 oz) package frozen spinach (thawed & hand-squeezed dry) .
  • FILLING .
  • 2 eggs, lightly beaten .
  • 1/4 c grated parmesan cheese .
  • 2 c marinara sauce or alfredo sauce .
  • 2 tsps fresh minced garlic .
  • 1 (15 oz) ricotta cheese .

  • 1 c shredded mozzarella cheese (or to taste) .
  • 1 tsp dried Italian seasoning (rubbed between fingers to release flavors) .

  • 1/2 c grated mozzarella cheese .
  • 2 tbsps finely sliced onions

Directions
  • Step #1 Set oven to 350 degrees.
  • Step #2 Butter a 13 x 9-inch baking dish.
  • Step #3 In a large bowl mix all filling ingredients together until well mixed then season this with seasoned salt & pepper to taste.
  • Step #4 Divide the cheese mixture into 8 even servings.
  • Step #5 Place one breast onto a plate, then place a serving of the cheese filling on the top of the breast.
  • Step #6 Roll up jellyroll fashion, then season outside of the rolled breasts with seasoned salt & pepper.
  • Step #7 Place into the baking dish seam-side down.
  • Step #8 Repeat with the remaining seven breasts.
  • Step #9 Drizzle the marinara sauce or alfredo sauce over the rolled breasts (you will not have to cover each breast completely with the sauce).
  • Step #10 Bake for about 40-45 mins.
  • Step #11 Sprinkle top top this with about 1 c mozzarella cheese (or to taste) & return to oven until the cheese melts (about 3-4 mins).
