Chocolate Caramel Cheesecake Recipe

Ingredients
  • 1/3 c sliced pecans .
  • 3 c Rice Krispies .
  • 1/3 c firmly packed brown sugar .
  • 2 eggs .
  • 3/4 c granulated sugar .
  • 2/3 c mini chocolate chips .
  • 2/3 c caramel ice cream topping .
  • 1/4 tsp salt .
  • 2 (8 oz) packages light cream cheese, softened .
  • 1 tsp vanilla .
  • 3 tbsps margarine .
  • 1 c low-fat sour cream

Directions
  • Step #1 In food processor/blender, mix cereal, brown sugar & margarine.
  • Step #2 Process until it becomes fine crumbs.
  • Step #3 Press into bottom & halfway up sides of 9-inch springform pan coated with cooking spray.
  • Step #4 Bake at 350°F about 8 mins.
  • Step #5 In small bowl mix together chocolate chips & pecans.
  • Step #6 Remove 1/4 c; set aside for topping.
  • Step #7 Sprinkle top remainder of mixture over baked crust.
  • Step #8 In large bowl with electric mixer, beat together cream cheese & sugar on medium until smooth.
  • Step #9 Beat in eggs one at a time, mixing well after each addition.
  • Step #10 Mix in salt, vanilla & sour cream.
  • Step #11 Pour into prepared crust.
  • Step #12 Return to oven.
  • Step #13 Bake about 40 mins or until set in center & pulls away from edges.
  • Step #14 Remove from oven & as soon as possible run knife around edge to prevent cracking.
  • Step #15 Cool 1 hr; remove outer ring.
  • Step #16 Chill at least 2 hrs before serving.
  • Step #17 Cut into wedges, place on serving plates.
  • Step #18 Sprinkle top tops with a little of the reserved chocolate/pecan mixture & drizzle each with 1 tbsp caramel topping.
