Ww 2 Points Pot Luck Pasta Salad Recipe

Ingredients
  • 1 c frozen peas, thawed .
  • 1 medium sweet red pepper, sliced .
  • 1 tbsp Dijon mustard .
  • 1/3 c olive oil .
  • 2 medium garlic cloves, minced .
  • 4 oz uncooked whole wheat pasta, corkscrew shape .
  • 4 oz uncooked whole wheat pasta, macaroni shaped .
  • 1 medium green pepper, sliced .
  • 10 medium black olives, pitted & sliced .
  • 1 medium summer squash, halved & sliced .
  • 1/4 tsp pepper .
  • 1/4 c fresh lemon juice .
  • 1 tsp dried oregano .
  • 3/4 c grape tomatoes, halved .
  • 1 medium zucchini, halved & sliced .
  • 1/2 tsp salt

Directions
  • Step #1 Cook pasta according to package directions, drain.
  • Step #2 Rinse pasta with cold water, drain again & set aside.
  • Step #3 Meanwhile, salt, oregano, msutard, lemon juice, prepare salad dressing by mixing together oil, black pepper & garlic in small bowl & setting aside.
  • Step #4 In a large bowl, mix cooked pasta with vegetables, pour in dressing & toss thoroughly to coat.
  • Step #5 Cover up & chill about 2 hrs.
  • Step #6 Points figured on 1 c per serving.
