Sweet Chili Chicken Recipe

Ingredients
  • 3 tbsps hoisin sauce .
  • 1 lb boneless skinless chicken breast halves, cut into 1 inch dice .
  • 3 tbsps Thai sweet chili sauce (red pepper jelly may be substituted, but don't use Asian chili paste) .
  • 2 tbsps reduced sodium soy sauce .
  • 2 garlic cloves, minced .
  • 2 c spinach, stems removed .
  • 2 tbsps fresh cilantro, sliced .
  • 2 green onions, sliced .
  • 1 tbsp gingerroot, peeled & minced .
  • 1 tbsp vegetable oil

Directions
  • Step #1 Heat oil In a large-ish non-stick skillet over medium-high heat.
  • Step #2 Add ginger, green onions & garlic & stir 30 seconds.
  • Step #3 Add chicken cubes & stir-fry 2 or 3 mins, until browned.
  • Step #4 Mix the hoisin, chili sauce & soy sauce & add to the chicken.
  • Step #5 Cook until chicken is fully cooked.
  • Step #6 Add spinach & cook a min until just wilted.
  • Step #7 Serve over rice & garnish with cilantro.
  • Step #8 If you prefer a thick sauce mix a tsp of cornstarch with a bit of water & stir in the until sauce thickens.
  • Step #9 Leftovers make a good wrap filling with extra vegetables.
