Chicken Chili Recipe

Ingredients
  • 3 c canned low sodium chicken broth .
  • salt & freshly ground black pepper .
  • 1 lb boneless skinless chicken thighs, cut into thin strips .
  • 2 tsps oregano .
  • 1 (15 oz) can black beans, drained & rinsed .
  • 2 large garlic cloves, minced .
  • lime wedges, & hot sauce for serving .
  • 1 tbsp ground cumin .
  • 1 medium onion, sliced .
  • 2 jalapeno peppers, seeds & ribs removed, sliced .
  • 4 tsps pure chile powder .
  • 1 1/2 c canned sliced tomatoes, with their juice .
  • 1/3 c sliced fresh cilantro .
  • 2 tbsps canola oil

Directions
  • Step #1 In large non-reactive saucepan, heat the oil.
  • Step #2 Add the onion & garlic.
  • Step #3 Cook over moderately low heat until barely tender.
  • Step #4 Add the chicken & cook over moderate heat until it is no longer pink, about 3 mins.
  • Step #5 Stir in the chili powder, cumin & oregano.
  • Step #6 Add the stock, tomatoes with their juice & jalapenos.
  • Step #7 Spice up with salt & pepper.
  • Step #8 Cover up, bring to a boil & let simmer over low heat/flame for 15 mins.
  • Step #9 Stir in the beans & let simmer, over moderately low heat until the chili is thickened, uncovered, about 15 mins longer.
  • Step #10 Serve with the cilantro & pass lime wedges & hot sauce on the side, if desired.
